ပင်လယ်စာတစ်မျိုးဖြစ်သည့် အခွံနှစ်ခြမ်းရှိသော ဂုံး (clam) နွယ်ဝင် ဂုံးယောက်မကို ရက္ခိုင်ပြည်၊ ကျောက်ဖြူမြို့နယ်တွင် ပေါများစွာ တွေ့ရှိရပြီး မာန်အောင်ဒေသတွင်လည်း အနည်းငယ် တွေ့ရပါသည်။ ဂုံးယောက်မကို မြန်မာအခေါ် (Myanmar Name) အရ “သင်တုံးဓါးဂုံး” ဟု ခေါ်ဆိုကြပြီး ဒေသအခေါ် (Local Name) မှာ လျှာထုတ်ဂုံး (ခ )ဂုံးယောက်မဟု အမည်တွင်ပါသည်။ ဂုံးယောက်မကို သိပ္ပံ အခေါ်မှာ Pharella spp ဖြစ်ပြီး အဂ်လိပ်အမည် (English Name) မှာ Knife (or) Razor Clam ဖြစ်သည်။
ဂုံးယောက်မ (ခ) လျှာထုတ်ဂုံး၏ သွင်ပြင်လက္ခဏာများ
ဂုံးယောက်မ (ခေါ်) လျှာထုတ်ဂုံး၏ သွင်ပြင်လက္ခဏာမှာ အလျား (၆) လက်မ၊ အနံ (၂) လက်မခန့်ရှိ ရှည်မျောမျောသဏ္ဌာန် အခွံပါးဖြင့် ဖုံးအုပ်ထားပြီး ပြင်ပအခွံ၏အရောင်မှာ အဝါရောင်အောက်ခံတွင် အနက်ရောင်နှင့် အဖြူရောင်ရောစပ်ပြီး ခြယ်မှုန်းထားသလို ဖြစ်ပါသည်။ ထိပ်ဖျားနှစ်ဖက်သည် အဝိုင်း ပုံသဏ္ဌာန်ရှိပြီး ရှည်ရှည်မျောမျောအခွံ၏ ဘေးတစ်ဖက်သည် တံခါးပတ္တာကဲ့သို့ အသွင်သဏ္ဌာန်ရှိပြီး အခြားတစ်ဖက်သည် ဖွင့်နိုင် ပိတ်နိုင်ပါသည်။
ဂုံးကောင်၏ ထိပ်ဖျားစွန်းတစ်ဖက်တွင် ချုံ့နိုင်၊ ကျယ်နိုင်သော အပေါက်ကြီး (၁) ပေါက်နှင့် အပေါက်ငယ် (၁) ပေါက် ပါရှိကာ အခြားထိပ်ဖျားစွန်းတစ်ဖက်တွင် သွင်းနိုင်ထုတ်နိုင်သော လျှာပုံသဏ္ဌာန် အသားပြားရှိပါသည်။ ၄င်းသည် (၃) လက်မခန့် ရှည်လျားပါသည်။ ဤဂုံးတွင် အခွံပါး (၂) ဖက်ဖြင့် ညှပ်ပြီး ဖုံးထားသောကြောင့် အထဲမှ ဂုံးသားသည် ပိုမိုပါရှိပါသည်။ ချက်ပြုတ်ကြော်လှော် စားသုံးမည်ဆိုပါက အချိန်အကြာကြီး မလိုအပ်ဘဲ မိနစ်အနည်းငယ်မျှဖြင့် နူးညံ့ပြီး ပိုမို၍ ချိုသောအရသာရှိပါသည်။

ရေအောက်ကြမ်းပြင်တွင် အချင်း (၈) လက်မခန့်ရှိသော အဝိုင်းကျိတ်ပြုလုပ်ပြီး အကျိတ်၏ အလယ်တွင် ဂုံးအကောင်တစ်ကောင်စာ အဝင်အထွက်ပြုလုပ်နိုင်သော ဒေါင်လိုက်ကျင်းပေါက် ရှိပါသည်။ ၄င်းကျင်းပေါက်သည် အဝိုင်းပုံသဏ္ဌာန် မဟုတ်ဘဲ ဂုံးကောင်၏ ပုံသဏ္ဌာန်အတိုင်း အခုံးပြား ဒေါင်လိုက်ဖြစ်နေကာ ကျင်းပေါက်မြေသားသည် အဓိကတစ်ခြမ်းနှင့် ပျော့ညံ့မြေသားတစ်ခြမ်း တည်ရှိနေပါသည်။
ဂုံးကောင်သည် သာမန်အချိန်တွင် ၄င်းကျင်းပေါက်ဝတွင် လျှာပုံကဲ့သို့ အသားပြားကို အပြင်သို့ ထုတ်ပြီး အောက်ကိုစိုက်လျက် အပေါ်ပိုင်းတွင် အခြားတစ်ဖက်မှ အပေါက်ငယ် (၂) ခုပါသောဘက်ကို ထောင်လျက် အပေါက်ဝ (၂) ခုမှ အကြီးအပေါက်ဝကို ကျုံ့လိုက်၊ ကျယ်လိုက် လုပ်နေတတ်ပါသည်။ ၄င်း အပေါက်ဝ (၂) ခုသည် အစာစားခြင်းနှင့် အညစ်အကြေးစွန့်ထုတ်ခြင်း ပြုလုပ်သော အပေါက်များဟု ယူဆရပြီး သင်္ကြန်ရေပိုက်မှ ရေပန်းထုတ်နေသကဲ့သို့ ၄င်းအပေါက်ဝ (၂) ခုမှ ခဏခဏ ရေထုတ်နေတတ်ပါသည်။
၄င်းဂုံးကောင်သည် တစ်နေရာမှ တစ်နေရာသို့ အလျားလိုက်သွားလာခြင်း မဟုတ်ဘဲ သူ၏အကျိတ် (ဝါ) ကျင်းအပြင်ဘက်တွင် လျှာပုံသဏ္ဌာန်အသားပြားကို ထုတ်ပြီး ကြမ်းပြင်တွင် ဒေါင်လိုက်တောက်လျှောက် ခုန်၍သွားလာတတ်ပြီး ၄င်းအပြုအမူသည်လည်း မကြာခဏ ပြုလုပ်ခြင်းမျိုး မဟုတ်ဘဲ အတော်အချိန်ယူ စောင့်ကြည့်ပါမှ တစ်ခါတစ်လေ တွေ့မြင်ရတတ်ပါသည်။ ထိုလျှာကဲ့သို့ အသားပြားသည် ရွေးလျားခုန်ရာတွင်လည်း အသုံးပြုသောကြောင့် ခြေထောက်ဟူ၍လည်း မှတ်ယူကြ ပါသည်။
ဂုံးဖမ်းဆီးခြင်း
ရေငုပ်ဂုံးဖမ်းသူသည် ရေအနက် (၃၀-၅၀) ပေ၌ ဂုံးရှာဖွေခြင်းလုပ်ငန်းအား တစ်ကြိမ်လျှင် (လေပေးစက်ရပ်တန့်ခြင်း မရှိပါက) အများဆုံး (၂) နာရီခန့်ကြာအောင် ရှာဖွေဖမ်းဆီးကြပါသည်။ ၄င်းအချိန် ပမာဏသည် ဂုံးငုပ်ရေလုပ်သား၏ ဂုံးထည့်အိတ်ငယ်တွင် ဆန့်သော ဂုံးပမာဏ (၃၀၀) ခန့် ပြည့်မီစွာ ရရှိနိုင်သော အချိန်ပမာဏလည်း ဖြစ်ပါသည်။ ဂုံးရှာဖွေသူ၏ ရေငုပ်ကျွမ်းကျင်မှုအပေါ်လိုက်၍ ဂုံးရရှိမှုမှာ တစ်ဦးနှင့် တစ်ဦး အနည်းအများ ကွာခြားကြပါသည်။ (၂) နာရီခန့်တစ်ကြိမ် ရေငုပ်ဂုံးဖမ်းခြင်းတွင် မကျွမ်းကျင်သူသည် ဂုံးလုံးရေ (၁၀၀) ကျော်ခန့် ရရှိနိုင်ပြီး ကျွမ်းကျင်သူသည် (၃၀၀) ခန့် ရရှိနိုင်ပါသည်။ တစ်ကြိမ်ဖမ်းဆီးပြီးပါက စက်လှေပေါ်ပြန်တက်၍ (၁၅) မိနစ်ခန့် ခေတ္တအနားယူကြပါသည်။
